Trader Joe's Appetizers - Bruschetta and Black Bean Salsa

Hi all!! We are back in 2019 with a couple awesome recipes I made A LOT this holiday season. I found I was always needing a last minute appetizer to bring to parties. These 2 quick and easy recipes were perfect.

Bruschetta

 First slice the baguette and butter each piece
Broil the bread until brown
After bread is done let it cool and Mix the Bruschetta Mix and half of the Feta Cheese in a bowl. Then spoon over the slices of bread

 Last, drizzle the glaze over the top and serve!
 Enjoy!


Black Bean Salsa
All you need are these four ingredients. Mix and serve with tortilla chips. You will probably only use 1/2 of the dressing. Add more as desired. 
(The picture has Quinoa chips. I prefer regular Tortilla but you could use either)

Chocolate Marshmallow Cookies



My friend Pam did it again. She makes the best treats! I was suprised how easy this was to make and oh so delicious! Enjoy!

Chocolate Marshmallow Cookies:

Combine 1 chocolate cake mix with 1/2 cup butter-flavored shortening and 2 eggs. Drop by tablespoon onto a baking sheet and bake at 350F for 8-10 minutes (done but soft in the center). Remove from the oven and stick half of a cut large marshmallow sticky side down in the center of each cookie. Put back into the oven for 2 minutes. Remove again, and gently press the marshmallow down. Once cooled, frost. 
Frosting recipe:
Combine 1/2 cup melted butter with 1/3 cup cocoa, 1/3 cup evaporated milk, 1 lb. powdered sugar, and 1 tsp. vanilla.

"Taco 'Bout Awesome!" Primary Board Meeting and The Bomb Salad!


I made these cute Salsa favors for our fabulous Primary Teachers at our Tres De Mayo Fiesta Board Meeting! I found this cute invitation on Pinterest and made it my own. 
The Jars were very easy to make. I just found this cute fabric at JoAnn's. Cut in 1" strips and frayed the edges by pulling a few threads.

 Cut these cute Mustaches out on my Silhouette. I think that stickers would work too!
 Used my glue gun to get everything in place!



 I found this tag on Pinterest as well! I used full sheet sticker paper and used my circle punch and placed them on the lid. 


 We had Taco's, Chips and Salsa and this amazing salad called "The Bomb Salad" - I got it from my friend Heidi who got it from our friend Karrissa. It's a total crowd pleaser and the dressing is delicious on your tacos too!

The Bomb Salad

Large Bag Coleslaw Mix (we get the big bag from smart and final)
Cherry tomatoes
Cojita Cheese, graded
Chili lime Pepita seeds (found in the bulk section at Winco)
Tortilla strips Salad Toppers

Dressing:
1 cup Mayo
1 cup Buttermilk
1 lime, juiced
1-2 cloves garlic
1/4 cup green salsa
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp pepper
1 tsp accent seasoning
1 bunch cilantro
Blend all in blender or food processor.

Mom's Meatloaf - MMMmmm Monday

We enjoy comfort food in our home! I have been making this recipe since I got married almost 25 years ago. It's one of the easiest meals and I'm pretty sure every mom has a great meatloaf recipe but my mom's is the best. This meal is served best with baked or mashed potatoes! Delicious!

Mom's Meatloaf
2 pounds Hamburger
2 eggs
1 onion, chopped
1 pkg Lipton Onion Soup Mix
2 Handfuls of Oatmeal
2/3 Tbsp. Ketchup

Mix all ingredients with hands and place in muffin tins or loaf pan. Bake at 350 degrees for 45 Minutes. 

A Delicious Meal!

Pork Tenderloin

I have a yummy recipe for you today!!! I have made this delicious dish many times since I got the recipe from my friend Heidi. Her daugher Jess once said she felt like she could swim in the sauce. I get it....I feel the same way! This is best when served with garlic mashed potatoes. 
Pork Tederloin
2-3 lbs Tenderloin
3/4 cup Lemon Juice
1/2 cup Soy Sauce
6 Tbsp Honey
1 small Onion
1 tsp. Garlic
2 Bay Leaves, Crumbled
2 tsp Salt
2 tsp Pepper
1 tsp Dry Mustard
1/2 tsp Ground Ginger
Puree all marinade ingredients in a blender and pour over meat. Marinate overnight. 
Bbq meat. Save Marinade! During the last 5 minutes of cooking the meat, boil the marinade. Use to pour over meat and potatoes or as a dip.

Italian Chicken Stir-Fry


Chef Paula invited a group of young women to her home and served a delicious Italian Stir-Fry dinner.  Instead of using Asian inspired sauces and noodles she went with Italian!  Which we all loved! 


She invited everyone there to participate as she taught us how to prepare this very simple, yet delicious meal.


Italian Chicken Stir-Fry
(Chef Paula)
Cubed uncooked chicken breast
Chopped broccoli, asparagus
Sliced mushrooms, olives and sundried tomatoes
Diced garlic
Bowtie Pasta
Parmesan cheese
Alfredo and Spaghetti sauces
Olive oil

Boil a large pot of salted water
While that is coming to a boil, pour olive oil into a skillet and heat, add chicken and cook thoroughly.
While chicken is cooking, steam the broccoli and asparagus, but stop before fully cooked.
Once the pot of water is boiling add the bowtie pasta and cook as directed on box.
Drain chicken and set aside.
Add more oil to the skillet and toss in garlic, broccoli, asparagus, mushrooms, olives & tomatoes.
Toss until mushrooms have cooked.
Sprinkle heavily with parmesan cheese.
Add chicken back into skillet.
Drain the pasta and add to the skillet also.
Toss until mixed, sprinkle on more cheese.
Serve with Alfredo and Spaghetti Sauce in separate bowls and let guests decide which sauce they want.  (Some people like to mix the two)

I serve it with a Caesar salad, fresh grapes and toasted garlic bread.


Along with the great food, Chef Paula treated us to her highly coveted homemade grape juice...in beautiful crystal goblets.


It was an evening of great food, fun friends and chef inspired learning.

Rainy Day Chicken and Rice Soup

It's a Monday morning and it's raining.  Beautiful day for a bowl of wonderful, warm soup.


This recipe comes from Trisha Yearwood.  Her recipes always have that down-home, make you feel good, goodness.

Rainy Day Chicken and Rice Soup

Ingredients
2 tablespoons dried parsley
1/2 teaspoon pepper
1/2 yellow onion, finely chopped
4 boneless, skinless chicken breast halves
5 chicken bouillon cubes
6 carrots, peeled and sliced
4 medium red potatoes, peeled and cubed
6 ounces fettuccine noodles
3/4 cups instant rice, uncooked
One 12-ounce brick processed cheese, cubed (about 3 cups), such as Velveeta



Directions
In a large stockpot combine the parsley, pepper, onion, chicken, bouillon cubes and 10 cups water. Bring to a boil and cook for about 30 minutes. Remove and reserve the chicken from the broth, then strain the broth into a large bowl. Discard the onion mixture. Allow the chicken to cool and cut into cubes.

Measure the broth and add water so that you have 8 cups of liquid in the large stockpot. Add the carrots and potatoes, bring to a boil and cook until the potatoes are done, about 20 minutes. Add the noodles and cook for 10 minutes more. Remove the pot from the heat and add the rice and reserved chicken. Stir the mixture and let it stand for 10 minutes before serving. Garnish with cubed cheese.

Mom's Infamous Split Pea Soup

Have you ever been to Buellton, California?  If you are driving up the coast (101 freeway toward the central coast) you must stop for lunch at Andersens, especially if you have children!  It just happens to be a great childhood memory of mine, and many others.


Hap-Pea and Pea-Wee, the friendly mascots of Pea Soup Andersen’s were my reasons for stopping.  I'll tell you more about them in a minute.

One summer my grandparents invited me to spend a couple of weeks traveling around California with them.  I remember being in 4th or 5th grade and was so excited about a trip with Grandma and Grandpa.  My Grandpa taught me how to dive in the hotel swimming pool.  He was so cool.  I saw beautiful country with beaches and redwoods.  So many great memories.  

On this trip they insisted that we stop for a bowl of pea soup at Andersens.  As a kid that didn't sound very appealing.  "Pea Soup...I hope they have lots of crackers!" I thought to myself.  Once in the restaurant I became a little more excited about the place.  It was quite charming.  My grandparents ordered the obligatory bowl of pea soup for me and my next thought was, "I hope it's not a very big bowl."


When the server placed the bowl of split pea soup in front of me, my Grandparents said, "There is a surprise at the bottom of the bowl.  You must eat all of your soup to see the surprise!"  The suspenseful thrill of a surprise at the bottom encouraged me to dig in.  


The more soup I ate the clearer the surprise was.  The cartoon characters of Hap-Pea and Pea-wee decorated the bottom of the bowl!  I remember being so proud of myself for first; eating a bowl of pea soup and second; for uncovering those lovable pea soup guys. 

I learned later in life that this pea soup was one of my grandmother's favorite meals.  She came to the United States as a child from Holland.  This soup reminded her of home.

She had a recipe from "home" that was very similar to Andersen's pea soup.  The only difference in her recipe was a Danish difference...potatoes.  Small diced potatoes were always added to her soup.  And I love it that way.  Gives the soup a little more texture and flavor.  She also adds very small diced carrots and bits of ham.  I think that Andersen's also offered soup with those ingredients as well.


My mom now makes the famous split pea soup and I'm always grateful when she shares.  She has agreed to let me share our family recipe, very similar to Andersens.

Ingredients
2 cups green split peas


1 stalk celery, coarsely chopped
1 large carrot, peeled and coarsely chopped
1 small onion, peeled and chopped
1 tbsp. Bon Appetite


2 to 3 potatoes, peeled and cubed


2 tsp. salt (to start with, add more after tasting)
pepper to taste
3 to 4 slices of ham, cubed in small pieces.



Sort the peas in mesh strainer, removing any stones or impurities.  Rinse them clean.


Combine the peas, celery, carrot, and in a soup pot and cover with 2 quarts (8 cups) of water.  After 10 min. of boiling add potatoes.

Reduce heat to a low simmer. Let the mixture cook for another 25-30 minutes till the peas are completely tender. Towards the end of cooking, add the Bon Appetite, then add salt and pepper to taste. I use about 1/2 tsp salt and 1/4 tsp of pepper. Use less if you're sodium-sensitive.

Skim the foam off or add 1 tsp. butter to dissolve (another danish secret).


Strain the peas through a food mill or a fine mesh sieve, if desired.  I prefer texture to my soup so I leave out this step.


If you strained the peas bring the soup to a quick boil once more on the stovetop.  Add more ham pieces for flavor, then remove from heat immediately. If the soup seems too thick, add some hot water to thin it out to the desired consistency.


Serve hot.  I like to garnish with crackers or croutons.  Keep leftover soup in a sealed Tupperware container.  When the soup is chilled, it will solidify.  Adding a little water and stirring as you reheat will help the soup to heat up more smoothly.
