Best Ever Chewy Chocolate Chip Cookies-MMMmmm Monday

Years ago my friend Judy shared a chocolate chip cookie recipe that has been shared many times since because they are so delicious.  These cookies are just what you think a GREAT chocolate chip cookie should taste like.

When Judy gave me the recipe she said I must follow it EXACTLY or the cookies would not be as delicious.  Not sure if she was just kidding, but I follow it EXACTLY and they are so delicious.

Judy's Chocolate Chip Cookies
Mix until fluffy
1 1/2 cups granulated sugar
2 cups brown sugar
1 pound butter (Judy said she usually uses margarine)

Add and mix till fluffy
1 T. vanilla
3 eggs, ONE AT A TIME

Mix in
6 cups flour
1 1/2 tsp. soda
1 1/2 tsp. salt

Fold in
6 cups chips (I sometimes mix chocolate and butterscotch)
nuts optional

Bake 10 min. at 375 degrees.  (For crunchier instead of chewy cookies bake just a tad longer)

Chili and Cornbread in a Jar-MMMmmm Monday

Fall comes around and my dad will often say, "the frost is on the punkin!"  That means soup weather is here!  And we LOVE soup.  Add fresh baked rolls or cornbread and it feels like Autumn has arrived!

I love this idea from Stone Gable.

For another really yummy, super easy bowl of chili we often use my sister Carri's famous recipe:

Carri's Chili
3 cans Hormel Chili (*Private Reserve from Costco)
1 lb ground beef
Taco Seasoning
1 to 1 1/2 cans tomato sauce
chili powder (to taste)
1/2 cup brown sugar (or to taste)

Dump cans of chili in crock pot.  Add browned ground beef with taco seasoning.
Add tomato sauce, chili powder and brown sugar.  Stir to combine and cook on low to heat.

Serve in a bread bowl or with corn chips, sour cream, green onions and cheese.  Add corn bread and a green salad for complete, delicious meal.

*Any favorite canned chili can be substituted for Hormel.  We just happen to like that brand.

Why Fit In When You Were Born To Stand Out?

We had an awesome lesson last Sunday in Young Women's class.  This was the little handout that the teacher gave all the young women, with an invitation to come to her house for chocolate chip cookies later that day.  Do you want to know more?

The teacher had a big mixing bowl, dry ingredients, wet ingredients and a mixing spoon.  While giving her lesson she started mixing the ingredients and explained that a cookie was yummy but when you add chocolate chips to the batter it becomes spectacular.  Did you ever notice that chocolate chips don't melt into the batter, but instead stands out in all it's chocolaty goodness.

As we progress through life it's important that we don't "melt" into the norm of society but instead stand out and stand up for good.

Honey Crisp Apple Salad-MMMmmm Monday

Honey Crisp Apple Salad
Honey Crisp Apple Slices (4 or 5 apples)
Kiwi Slices (2 or 3 kiwis)
A handful of frozen Raspberries
Mix in to lightly coat fruit:
Vanilla yogurt (I used Dannon Light and Fit)

I found this recipe on Pinterest (not linked to a specific site but instead with this picture).  Apples are in season now and with the addition of a few other ingredients this salad was so tasty.  The raspberries give the salad an interesting texture.  And they must be FROZEN.
